I love when a client gets so excited about receiving their Hot Chocolate Bombshells. While many enjoy the melting of the Hot Chocolate Bombshells with milk and sipping the delicious hot chocolate that presents itself, it is important to us that the client also understand the quality of chocolate used, compared to others available online, in-stores, and other local businesses. The Baking House Co. uses Couverture Chocolate by Callebaut to make the delectable and delicate chocolate shells that encase the homemade hot chocolate blends and mini marshmallow. The chocolate is gluten-free and dairy-free.
What is a Couverture Chocolate?
It is a very high-quality chocolate that usually contains 32%-39% cocoa butter content. Couverture chocolate is used by top professionals to mold, dip, and garnish. The Callebaut Couverture chocolate used at The Baking House Co. contains 36.9% cocoa butter content. Plus a tiny bit more is added using Callebaut’s cocoa butter (mycryo) during the tempering process. The higher percentage of cocoa used, also makes the Callebaut Couverture chocolate an exquisite line between semi-sweet and dark chocolate.
Why is Cocoa Butter so important?
The ratio of Cocoa : Cocoa Butter is an intricate dance of flavor and stability. Cocoa butter is naturally extracted from the cocoa bean. It plays an integral role in the melt-in-your-mouth feel and flavor. Cocoa Butter also gives correctly tempered chocolate, that signature snap, and sheen.
Other more commonly used products such as candy melts and compound chocolates use palm oil and other oils to imitate these effects for faster production and lower quality with a higher sugar content.
